This is one of Sara’s favourite recipes. Refreshing and delicious, she makes it as a dinner party entrée (also known in some countries as an appetizer) and relies on it when unexpected guests pop in.
Prep time: 45 minutes Cooking time: 10 minutes
Ingredients:
1 cucumber
200 g/ 7 oz tuna
200 g/ 7 oz butter
1/2 litre/ 2.11 cups mayonnaise
0.5 dl/ 1.70 oz tomato paste
Parsley, salt, pepper… to taste
Instructions:
Peel the cucumber, cut into ¼ inch slices, scoop seeds from middle.
Blanch in boiling water for 10 minutes.
Remove carefully from water and place individual slices on paper towel.
Mix the tuna, softened butter and seasoning.
Prepare the topping by mixing the mayonnaise and tomato paste.
Place the cucumber slices on a serving dish and fill the holes (where the seeds were) with the tuna mixture.
Cover with topping and let sit in refrigerator for a while.
